Mash Tun specific heat setting for Chapman insulated SS mash tun

I'm wondering if anybody has any input on what "Mash Tun Specific Heat" setting I should use for my Chapman insulated stainless steel mash tun?
Should I go with the 0.12 for stainless steel, or something closer to the 0.3 for plastic (which I used to use for my igloo cooler with accurate results).
Just wondering if anybody has any real world experience with one of these insulated SS mash tuns like the Chapman or SS Brewtech infussion mash tun.

I’d go with the 0.12 specific heat for stainless steel, since that’s much closer to the real thermal properties of your insulated SS mash tun, and many brewers report better temp accuracy using the metal value over the plastic one.

I’ve used a couple of insulated stainless steel mash tuns, and it’s definitely a bit different from using plastic coolers like the Igloo. Stainless steel, being denser and more thermally conductive, tends to have a lower specific heat compared to plastic. If you’ve been getting accurate results with the plastic cooler setting (0.3), it makes sense to be cautious with the stainless version.


For something like the Chapman or SS Brewtech, I’d suggest starting closer to the 0.12 range for stainless steel, as that’s more typical for metal. However, if you’re getting a significant heat loss or your temperature stability seems off, you might try adjusting it a little higher to account for insulation characteristics, especially with the Chapman’s design.


It’s always a bit of trial and error with these things, so testing it out with a couple of brews and dialing in will give you the best results.
