I know this has been asked before, but I’m in the market to buy some more hops. There seems to always be a gradual influx of new and interesting varieties.
Out of curiosity, what is your most and least favorite hops?

Most people these days are fans of the newest varieties developed recently not to mention the new oils, extracts and concentrates but I'm still a fan of the classics. American C-hops... Centennial, Cascade, Columbus, and Chinook. English Golding and Fuggle. And European Noble hops... Hallertauer, Tettnang, and Saaz.

Note: Citra is often listed as an American C-hop but were only developed in the early 2000's and Spalt hops are included in the Noble category but were not commonly available when I started brewing.

A lot of the hot hops at the moment are out of New Zealand and Australia as these have high thiols and also high levels of hop oils like geraniol that can deliver tropical fruity flavors in beers like IPAs.

For me, I am a lager centric brewer, so my favs are all German noble hops and Saaz. Saaz AA% the last few years has been low, so I started using Sterling as a sub for that at times. Just went on a splurge and bought 1 lb packs of newer Czech Hops, Agnus, Sladek, Bohemie and Premiant. Can't wat to give them a go. My least favorite hops, Northern Brewer. As you may know, Northern Brewer is the "it" hop for making California Commons, the style guidelines even stress that. But for some reason, I constantly get dinged in comps using 100% Northern Brewer for being "too fruity, too citrus forward" and not having the woody, piney, minty notes. Judges have even told me to "try using Northern Brewer hops next time".

I'm a big fan of Mosaic, it's so versatile and that tropical/citrus flavor never gets old. I also like Nelson Sauvin for its wine-like flavor, which really elevates a pale ale or even a saison.

Give me the old C hops any time! Cascade, Centennial, Chinook and CTZ are among my favorites. I do brew an occasional ESB and like Fuggles as well.
