Hi all  Have a cider that has some nice flavor but unfortunately some of the alcohol turned into vinegar leaving an unwanted after taste.  I was thinking about experimenting with a small batch by adding some baking soda and some frozen apple juice to take away the tangy flavor.

Has anybody ever tried adding a small amount baking soda to get a more alkaline flavor?

I've used this trick 3-4 times to correct a wine based fish sauce tasting a bit to acid. However, I've no experience with correcting a vinegar of-taste in the wine itself.
