Hey guys, I'm planning on saving some yeast from my Belgian Wit. I've seen quite a few videos on the subject on "youtube", and I feel comfortable doing it.
I am just wondering how long it will keep in the fridge? I can't much information at all on this subject.
Thanks,
Mark

I have heard two weeks, but all you would need to do is to feed it a small starter to keep it active and then you'd have another two weeks.

I've done that when brew day got delayed and it was fine.

Generally as fast as you can brew.  Each wash gets better.  To a point.  Make sure you calculate your starter volume from the 'yeast drop' date, not the harvest date.

I think in 2 years it will be completely dead even at 35 degrees F. At 6 months I would taste and smell it before using. At 1 year I would make a starter with it before using it.
