I have a DIPA that has stopped fermentation. starting gravity is 1.090. gravity after 3 days is 1.057. It would appear that my yeast was under pitched. Can I add an additional pack of SO5 to help it along? or am I too late?
 
You can, but I would give it a few more days to work.  3 days may be normal for a relatively low gravity beer to ferment out completely, but higher gravity means more time needed for the yeast to catch up and do their thing.

Is your gravity reading with a hydrometer or refractometer?  If it is with a refractometer, then you will need to convert the reading based upon the presence of alcohol.  The refractometer tool in BeerSmith can help with that or you can do it directly in your recipe on the 'session' tab.
