Good morning, just a question. Post mash gravity is measured, lets say, (after 30 minutes of recirculation) the last minute after send the wort to the boiler? In other words, collecting and measuring the firsts drips of wort coming from the herms to the boiler (much or less the same)?

I measure the post mash gravity when all the wort from the mash tun, including all the sparge water, is collected in the boil kettle and before any additions of top off water and/or sugars are made.  If you are recirculating your wort through a HERMS coil, then after a short period of recirculation, the wort should be reasonably mixed enough to get a good representative sample.
