LORD HELP ME, I NEED TO RESEARCH GLUTEN FREE

Hey all. Found out that I am gluten intolerent. What could be worse for a beer guy? Well, want to make the best of a bad situation. I am researching gluten free recipes and find that there are grains missing on the recipe builder. Anyone be albe to help me out with Millet, buckwheat, black rice etc?
Guys, I need your help in this, my darkest hour!

  Sorry to hear about your situation. My wife was diagnosed with celiac disease 10-15 years ago, when gluten-free products were hard to find (and before I began homebrewing). She had to make her own bread, and had to give up drinking beer. Fortunately, she has a mild case and can tolerate trace amounts of gluten so we haven't had to go totally crazy and separate our kitchen into different sections. I use Clarity Ferm in all my beers, and that seems to do a good enough job that she can drink them with no problem. Other people have more severe problems and need to use gluten-free ingredients from the start. If you have been drinking regular beer for some time without severe problems, then perhaps you don't have to go totally gluten free. I would say give Clarity Ferm a try before you start using sorghum, millet, etc. Then you can brew exactly as  you have been doing and just dump a vial of magic juice in when you pitch your yeast.

That's awful my friend, I'm only allergic to wheat so I can drink anything that doesn't have wheat.

I use Clarity Ferm in every batch to reduce gluten.  My missus is allergic to gluten and loves my beer.  Clarity Ferm reduced the gluten levels below the level for her to have an allergic (or any) reaction.  I share my gluten reduced beers with several gluten intolerant folks who have not had any issues and are happy to have full flavored beers.  Everyone is different but give it a try and maybe you will have the same success as I did.

There is zero noticeable affect from Clarity Ferm.  So, no recipe changes are necessary.

If you want to try a couple of commercial beers that use the ingredient in Clarity Ferm to see how you react, here are a couple. The key phrase is "Crafted to remove gluten".

P.S. my screen name and signature are a double pun, with one part based on GF being the abbreviation for Gluten-Free. The other part is that Giga is 10^9 and Femto is 10^-15, so GigaFemto means micro as in microbrewer.
 
I'm about two months into aging a Gluten Free Lambic for my wife.

I made a partial mash batch on my Electric HERMS system.

Millet ~ Wheatish.
Sorghum ~ Barley

Used malted millet and sorghum extract.

 
This is why I love you guys! Thanks for the help. As it turns out, screw it! I just suffer through and amended my diet. Still suffer with the issue, but beer is way too important to my way of life to let a little issue like intolerance get in the way. I did find one beer that was really tasty though, called Glutenburg. If you have any buddies that cannot tolerate glutens, and don't have the resolve that I do to stay in the game... Have them give this one a try. I was pretty impressed with it. Just hoped I could make a clone at home. BTW HAPPY ST PADDYS DAY!

Its awful my friend it really is. As I said I'm allergic to wheat it makes me break out in random hives if I eat it among other things. And I used to love wheat beers. Now I cant have them at all. Still trying to decide if it is the definition of hell.


I'm sure you could figure out a recipe that would work for you.
 
Granted this isn't directly answering your request on gluten-free brewing tips, but I post to highlight that it can be done and even be commercially viable if done right...

I think the good news is that there are getting to be more options for gluten-free grains being made available.  The AHA published a recipe just this past week (or so) for a gluten-free stout which can be found at https://www.homebrewersassociation.org/homebrew-recipe/no-fail-stout/.

Hopefully, between the availability of more grain options and your 'damn the torpedoes' attitude things will get better for you.
