help wanted with recipe.

Hello,
I'm fairly new to homebrewing and are in need of some help.

My girlfreind asked me if I could brew something similar to the Mate Veza Morpho ale. an unhopped ale with yerba mate, hibiscus and bay leaves.

I have searched but I cannot find a recipe to anything like it, my google-fu has failed me  :-[

So I am hoping someone here could help me?
I'm looking to brew a 25L/5.5 gallon batch.

What you're asking about is a Gruit.

What I'd start with is a Belgian Witbier recipe. I wouldn't cut out hops alltogether because you want some of the preservative power it brings. I'd cut the bittering hop to 6 IBU and omit any later additions. This is below the threshold of taste, but does give a little preservative power that will extend the beer's shelf life.

I'd then replace the spicing with the Yerba Matte and bay leaf. Generous amounts of bay leaf, like 10 leaves per gallon. The Hibiscus would go into the secondary until it's a nice rosy pink color.
