Citrus Zesting

I'm getting into all grain brewing, and thinking of doing a wheat beer, building my own recipe, and I don't seem to find many recipes with citrus zest.  I'm thinking of doing a Grapefruit Zested Heffe, and wondered if there is a rule of thumb for oz. of zest per 5 gallons, or some other starting point.  I typically do 10 gallon batch size, thinking I'd add zest near the end of boil.

I use 1-1,5 lemon zest per 5 gallons for my Belgian Wit.
I once used 1 grapefruit zest per 5 gallons in a Dunkel type of beer that I thought was too much.

Just for clarification - is that 1-1.5 oz or 1-1.5 lemons.. same for the grapefruit?  1 whole grapefruit zest does seem like a lot to me..
