I'm looking at moving to 10 gallon BIAB with 2 vessels. How would I go about setting up the mash profile for a 30 gallon cooler and a 15 gallon pot?

Just take a single infusion profile and edit it to reflect your vessel sizes.  Make sure you click the box for 'BIAB mash with full boil' if that is what you are doing.  If you are planning on sparging, it is really no different than having a traditional mash tun and you can leave it as a single infusion profile.

These instructions are for a more traditional mash/lauder tun, but they should be applicable to your BIAB system. The important point is to ensure all your losses are considered: grain absorption, mash tun deadspace (yours should be zero), boil-off, kettle deadspace, and trub.
