I'm about to buy Beersmith but I just have one question

I'm actually a one gallon brewer.  Can I take certain recipes which are made for 5 gallons and scale it down to a one gallon brew within the program?  If so then I'm sold!

Yes, you can scale recipes using the Scale Recipe button.  Of course your Equipment Profile would need to be set accordingly for 1 gal batches.
