| Taste Notes: West Coast Style Pale based on an IPA I've been brewing for several years. It looks like a lot of hops, but it is well balanced and smooth. Drinkable after only two weeks aging. |

| [Note: "Hop Blend" consists of 1 oz each of Amarillo (7.8%), Cascade (4.0%), and Centennial (5.9%) whole hops.] Mash at 150F for 45-60 min. Mash out at 170F. Collect enough wort to allow for an 80-minute boil leaving 5.5 gallons of wort in fermenter. Ferment at 67-69F for 5-6 days, transfer to secondary for a week before bottling. Alternatively, after primary, transfer to corny keg with 2.25 oz of corn sugar, keep at fermentation temperature for 1-2 weeks, chill, and drink. (If bottling, prime with 4 oz of corn sugar.)
